I’ve always had a love for pies, apple pies especially, but unfortunately, I’m not the greatest baker in the world 🙈 However with quarantine, I’ve become more adventurous and have perfected this delicious recipe for mini apple pies!
Every time I make these, a batch of 12 always gets devoured in a couple of hours! Served warm with a side of vanilla ice cream makes this a perfect snack or dessert on any day! They’re also great for parties or gatherings since there won’t be any cutting or messy fillings involved. Plus everything’s more fun when they’re mini sized!

INGREDIENTS
Crust:
- 1 2/3 cups flour (I usually like to use whole wheat)
- 1/2 cup butter
- 1/2 cup water
- 1 tsp salt (optional, but brings the sweetness out more)
Pie Filling
- 4 apples
- 1/2 cup Stevia (I like my zero-calorie sweeteners, but sugar is fine)
- 5 tbsp flour
- 2 tbsp butter
- Cinnamon to taste
STEPS
STEP 1
Peel, core & cut the apples into small pieces. Granny smith is known to be the apple for baking but I love to use a mix! For this batch, I also mixed in some golden delicious & pink lady.
STEP 2
Mix all the filling ingredients together, you can substitute cinnamon for some vanilla extract depending on your taste! I added in a little bit of cinnamon for this one but its completely optional!
Set this aside for later
STEP 3
Cut chilled butter into little squares. Mix in all the crust ingredients together, adding water in a tablespoon at a time. Start with 3 tablespoons, then add in just enough water to make the dough stick together! You can use a food processor to make this process easier in the beginning but I prefer to combine by hand.
STEP 4
Roll out the dough to about 1/8 inch thick, then cut out circles about the same size as your muffin pan. You can use a cookie cutter or if you dont have any (i.e. in my case), just use a glass cup!
Roll these circles out a little more, then press each circle into the muffin pan until all sides are covered, forming little “bowls”. No need to grease the pan! The butter in the dough will make sure they don’t stick
STEP 5
Preheat oven to 425 Fahrenheit
Spoon the fillings into each of these little bowls, you can use the remaining of the crust dough to create cute patterns on top, or just leave it open and it’ll look more like an apple tart!
OPTIONAL: Add a tiny piece of butter on top of each to make them extra creamy
STEP 6
Bake at 425 degrees Fahrenheit for around 17 minutes, or until the crust is golden brown and the apples are bubbling!
Let cool and pop them right out with a spoon or your hands!
